Simon discovered an interest in food while spending time in the kitchen with his mum Debbie. Starting work in a professional kitchen in his home town of Virginia Water, Surrey at the age of 15 it became obvious that this was his chosen career path and he quickly worked up the ranks. From pasta chef in a local Italian restaurant, to Sous chef at the prestigious Harte & Garter Hotel in Windsor & on to The Dorchester, Coworth Park & Mac Donald Hotel, Windsor his younger years were spent learning through hard work & dedication to the kitchen.
Simon credits his 4 years as a private chef working throughout Europe with providing him with the experience & opportunity to help develop his own unique style of cooking, which gave him & his wife the confidence in buying an old cocktail bar to transform in to the now award winning Buoy and Oyster in Margate
As a chef, Simon loves creating elevated versions of dishes that remind him of his travels & favourite family meals.
Simon lives in St Peters with his wife Nadine, one year old son Bowen and cheeky Beagle Luna.
When he isn’t cooking, Simon loves spending time outdoors with his family, cycling, eating out & watching cooking programmes on Netflix!

Fun Fact - A lover of D&B music Simon met now wife/business partner at a Hospital Records night at Fabric 11 years ago! What a start!
